Tom Barr's Stuffed Peppers

Ingredients
• 1 pound ground turkey
• 4 medium bell peppers (Green, Yellow, or Red)
• 1 large celery stalk
• 8 mozzarella strips cut ½ by1 inch
• Salt and Pepper
• 1 cup rice
• 1 cup water
• 1 tsp butter
Cooking Instructions
1. Cut tops of bell peppers and core out the middle. Chop celery into small pieces. Brown the ground turkey.
2. While turkey is browning combine rice, water, butter in microwavable bowl and microwave on high for 5-7 minutes.
3. Drain excess fat from ground turkey and add celery and rice, salt and pepper to taste.
4. Fill bell peppers with ground turkey mixture and top with mozzarella strips Bake at 450 for about 30 minutes.
5. For added taste, crumble left over Tilapia or other white fish into ground beef mixture
