Pat Tovo's Mexican Black Bean Sausage Chili's
Ingredients
• 3 links Sweet Italian Turkey Sausage
• 2 T Olive oil
• 1 medium onion chopped
• 1 tcumin
• 1 t.finely chopped garlic
• 1 t. oregano
• 1 chopped chipotle in adobo sauce
• 2 cans black beans, drained
• 2 cans chicken broth
• 1 can diced tomatoes
• 2 T lime juice
• 2 T finely chopped cilantro
• Sour cream and sliced scallions for garnish
Cooking Instructions
1. Heat oil in large heavy pan. Cook onion about 4 minutes. Remove sausage from casing and break up into pan. Cook until no longer pink. Add cumin, garlic, oregano and chipotle. Place 1 cup beans and 1 cup broth in food processor and blend until smooth. Add to pan along with remaining beans and broth, and the tomatoes. Bring to a boil. Reduce heat and simmer 30-40 minutes, partially covered. Stir in juice and cilantro. Serve warm and garnish. Sun Chips make a great crunchy addition.
