Barbecued Chicken Burgers

Serves: 4

Ingredients
• 1 pound ground chicken
• salt to taste
• freshly ground black pepper
• 1/2 cup bottled barbecue sauce
• 4 hamburger rolls
• 4 slices low-fat Cheddar cheese
• 4 large lettuce leaves
• 4 slices tomato
• 4 slices Vidalia onion

Cooking Instructions
1. Shape the ground chicken into 4 patties, about 1/2-inch thick. Season with salt and pepper and refrigerate until ready to cook.
2. Preheat the grill to medium-high.
3. Grill the burgers until well-browned on one side, about 6 minutes. Turn them to cook the other side, and spoon the barbecue sauce over the cooked side. Cook on the second side until the burgers are cooked through, about 6 minutes.
4. Toast the rolls on the grill.
5. Top the burgers with the cheese, lettuce, tomato and onion and serve them on the toasted rolls.
